The purpose of this award is to equip the learner with the knowledge, skill and competence to bake and decorate a limited range of cakes using a range of techniques in a professional training kitchen.

Ingredients for basic cake types and ratio of ingredients in recipes
Correct use of baking temperatures and times
Decorate cakes using a range of techniques
Cost involved in baking and decorating cakes

This programme runs for 4 days one day per week
